Pinot Noir Fleur de Sel

What doesn’t taste better when you add a bit of red wine? Salt Spring's red wine infused fleur de sel pairs perfectly with with red meats, potatoes, salads, fruits, cheese, apple tart. Or just experiment… you can’t go wrong! C’est la fete!

Fleur de sel and sea salt are both derived from seawater. Fleur de sel are the distinctive pyramid-shaped crystals that rise to the top during the evaporation process. Like a delicate flower they bloom and float on the surface and must be gently harvested by hand. Crystals are very difficult to achieve. A unique set of oceanic and environmental conditions must align for them to form.

Gourmet Garnish: Fleur de sel is a finishing salt that enhances the taste of soups, salads, fish, meat, fruit, vegetables, even dessert. It is important to only use it on food just before serving, and not while cooking as high temperatures will cause the crystals to melt and lose their unique character.

Three-finger Pinch: There is an art to sprinkling fleur de sel on your food. Take a three-finger pinch, then in one circular motion high above the plate crush the crystals between your fingertips letting them fall randomly to create a rollercoaster of taste with every bite.
